Sebby’s Scrolls was founded by husband and wife team, Sebastian and Annabelle (Sebby and Belle), who have been cheffing together since 2017.

During the 2020-21 lockdowns, having plenty of time on his hands, Seb, a passionate chef and baker, began making cinnamon scrolls at home as a hobby. This quickly turned into an obsession, as he became fixated on improving the recipe in order to create the best Cinnamon Scrolls out there. During this process he realised, and said to Belle, “no one is doing scrolls like this, so I’m going to be the one to do it.”

What started as a personal project quickly gained popularity with friends, family and neighbours, and as lockdowns begun to lift, he paired up with Belle to turn this project into a business. Having come from years in the cafe industry, the team saw a gap in the market to introduce a new, fresh and exciting product to the sweets cabinets across Melbourne’s cafes. This first business plan landed them in over 50 cafes within the first year, with a waitlist of over 100 more.

Due to the overwhelming demand, they expanded their wholesale operation into retail, offering scrolls from the front door of their commercial kitchen space in Caulfield South. Fast forward to August 2023, they renovated this space to create a designated take away window for their scrolls and coffee, which is still going strong today.

With 2023 drawing to a close, the pair made the tough call to discontinue with wholesaling to other venues in 2024, in order to focus on and be able to serve the demand they were receiving at their corner store.
And unless you’ve been living under a rock, the demand and popularity of these scrolls still brings hundreds of people per week to their door.

Sebby’s Scrolls has grown from a two-person operation to a team of over 20. The team produce between 6000-7000 scrolls per week, per store.

Sebby and Belle’s mission is to not only continue to make delicious products that spark joy in others, but to create spaces that are as warm and welcoming as their famous Cinnamon Scroll.
